beach blanket bingo*

1 oz white tequila (we use sauza silver)

1/2 oz grapefruit juice

splash simple syrup

2 dashes peach bitters (we use fee brothers)

combine in a shaker over ice and shake briefly to mix.

strain into a large flute and top with prosecco

* this is a variation on another cocktail of mine, called a beach blanket, which is tequila, grapefruit and simple shaken with a dash or two of peach bitters and served on the rocks with optional sugar/salt rim.
