caribbean christmas

1 1/2 oz dark rum (i prefer gosling’s)

3/4 oz lime juice

1/2 oz simple syrup

5-6 thin slices of ginger

2 pinches of cinnamon

 

muddle ginger.  top with ice.

add all but one pinch of cinnamon.

shake and strain over fresh ice.

garnish with lime and the other pinch of cinnamon.

 

another personal classic.  tastes exactly like its name.  don’t think i’ve ever made this for anyone who didn’t love it, and if i did i’ve blocked it out.  works just as well on a sunny day as in the snowy (or, here, rainy) depths of winter.
