one two punch

1 1/2 oz white tequila

1/2 oz blueberry-tarragon syrup

1/2 oz lime juice

1/2 oz pineapple juice

sugar/salt rim

 

combine ingredients over ice.

shake and strain into a bucket over fresh ice.

 

just a quick and dirty punch recipe created at the request of one of the chef/owners.  monday night the restaurant is being featured on the food network for our rice bowls.  the theme of the show is messy food, and we’ll be serving a pork belly rice bowl in honor of the show, which the one two punch is meant to accompany.  i think it’ll work, since there’s enough acid to stand up to the fattiness of the pork belly, but enough pineapple roundness to balance out the sour.  we’ll be rimming it with togarashi minus the sesame (togarashi is a spice blend with black and white sesame seeds, orange zest, salt, sugar, seaweed, and one or two other things), but for those trying this at home a mix of sugar and salt will do the trick.
